So the last time I did a vid was back in 2004. I used to use DVD decrypter but I read in another post that due to its age, it can't really keep up with some of the new DVDs. I don't mind having to pay for a program as long as the price isn't insane, but is there anything out there compatible with Windows 7 that is easy to use? I haven't done this in years so I pretty much have the training wheels back on. :(

I use AnyDVD to decrypt the discs, and after that any video cutter/ripper that suits my needs (Like mpeg2cut to rip uncompressed fragments or Handbrake if I want to compress them.)
AnyDVD is paid software with 30 days free trial. Once you install and run it, it automatically decrypts any DVD you insert, so you can use it like it's not encrypted.
Not sure how it handles the most recent encryption algorithms, as my source discs tend to be pretty old. But as it has free trial, you can check it yourself.

MPEG2cut and handbrake are free.

seconding anydvd, w caveat that I bought it during a sale that guaranteed free lifetime upgrades (for the usual price of the software), but honestly it wouldn't have been exorbitant otherwise, just not cheap. but might be worth watching for another sale, idk if they're still doing that periodically. and I'm pretty sure it's currently the best available option. it works a little differently than dvd decrypter but it's easy to figure out.
